Cavolo Nero & Basil Spaghetti

A quick and easy pasta sauce that's full of goodness. This dish takes around 20 minutes to prepare and is one that will be loved by the whole family. My 4 year old especially loves this, she has lovingly named it 'her green pasta'  and it is the perfect way to get her to consume a good portion of greens without complaint.

 

Ingredients

180g Cavolo Nero

20g Fresh Basil

50g Pine Nuts

2 tbsp of Olive oil

50ml pasta water 

250g Spaghetti

1tsp sea salt

Method

1) Bring a pan of salted water to the boil and once boiling add the cavolo nero and blanch for 3 minutes. Using a pair of tongs, transfer the cavolo Nero to a blender, leaving the water to remain for the pasta.

2) Add the spaghetti to the same pot and cook to packet instructions. Drain once cooked and set aside in the pan.

3) Meanwhile, heat a frying pan over a medium heat and once hot, pop in the pine nuts and gently toast until golden brown. Making sure to shake or stir the pan every 10 seconds or so. Set aside a tablespoon or two of the pine nuts to top the pasta once served.

4) Add the remainder of the toasted pine nuts to the blender along with the fresh basil, olive oil, pasta water and sea salt. Blend until smooth, adding touch more water if needed, then pour the sauce over the spaghetti. Gently toss or stir to coat the spaghetti and serve topped with a spoonful of pine nuts and a touch of olive oil, if you desire.
