Chocolate chip & Smoked sea salt cookies

These cookies have been on rotation in my household for the past month or so. They had begun as double chocolate chip cookies, but although absolutely delicious, they were a little too rich for me, so I removed the cacao and added a good pinch of smoked sea salt and these soft and chewy delights were birthed.

Enjoy them with with a warm drink, I love these with mango and raspberry leaf tea. x

 

Ingredients

Makes 10-12 cookies

185g coconut sugar

190g white spelt flour

100g dark chocolate chips

50 ml coconut milk

60ml melted coconut oil

1 tsp vanilla essence 

1/2 tsp smoked sea salt

1/2 tsp baking powder 

 

Method

 

1) Pre heat your oven to 175 ° and line a large flat baking tray with baking paper.

2) To a mixing bowl add the coconut sugar, melted coconut oil and vanilla essence and stir to combine 

3) Add in the flour, smoked sea salt and baking powder and mix well. Then add in all other ingredients and combine until you are met with a perfect cookie dough.

4) Using a tablespoon, scoop out one slightly heaped spoonful of the cookie dough, place it in the palm of your hands and roll into a sphere. Place the cookie sphere on the pre lined baking tray and repeat this until the mixture has finished. The dough should make 10-12 cookies.

5) Pop the cookies in the oven and bake for 10-12 minutes. I like taking them out of the oven around the 10 minute mark for a soft and chewy cookie.

6) Allow them to completely cool before eating. Store in an airtight container for up to 4 days
